Perhaps you want to focus on recipes that are lighter in calories, refined sugar, and unhealthy fats while still being delicious and satisfying, or perhaps, like many of us, you have dietary needs and don’t want to compromise on taste. This prep, set-and-forget breakfast treat or afternoon pick-me-up has no nasties.

This recipe is simple to make and contains our exclusive So Choc made in-house by our coffee roasters in Bibra Lake with only the finest ingredients and very few of them. Whether you follow a vegan lifestyle or simply enjoy exploring new culinary horizons, vegan eats can be a delightful and satisfying addition to any menu.
LBM SO Choc Chia Pudding
Ingredients:

- 4 tbsp of SO Choc

- 16 tbsp of White Chia Seeds

- 1 litre of Milklab Almond milk

- 500g Coyo Vanilla Yoghurt

- Fresh Fruit to garnish (optional)
What you will need:

- Prepare the night before

- A food processor or a large mixing bowl

- Glad wrap or a sealed container

- Ingredients
Instructions:
- In your food processor or mixing bowl add SO Choc, Chia Seeds and Almond milk. Mix until all ingredients are combined
- and place your mixture in a sealed food container and place in the fridge to soak overnight. Set and forget
- In the morning take your mixture out of the fridge and stir through your Coyo Yoghurt
- Spoon your mixture into individual serving bowls, glassware, or reusable Tupperware and keep refrigerated until ready to serve (depending on serving size you should be able to prep 4 – 5 servings)
- Add your fresh fruit toppings when you are ready to serve or in the previous step
- Tips: Add fresh mint, you’re favourite seasonal fruits, and coconut shavings or grate some chocolate on top for that Easter vibe. You can substitute the white chia seeds for black and the Almond milk with a plant-based milk/milk of your choice. If you prefer more chocolate with your chocolate, you can add to taste.
